• As a general rule,when usingrecipesor preparedmixesdevelopedfor a radiant
bakeoven,settheoventemperature25°F lowerthanthe reciperecommended
temperature.Timeswill be similarto or a few minuteslessthan recipe recom-
mended times. The chart on page 26 comparestimes and temperaturesof
manybakedfoods.Usethisasa reference..
• Forbetter browning,large panssuch as cookiesheets,or rectangularbaking
pans should be placed/engthwise, front to back, on the rack. This centers
the food in front of the convectionfan for better air circulation which gives
betteroverall browning.
• Cookie sheets should be without sides and made of shiny aluminum. The
bestsizeto useforcookiesheetsandjelly rollpansis 151hx 12-inches(overall
size, includeshandles).
