Roasted Beetroot Dip

1clovegarlic
2tablespoonsoliveoil
1tablespoonlemonjuice
½teaspoongroundcoriander
½teaspoongroundcumin
Saltandfreshlygroundblackpepper,totaste
1.Preheatovento180°C.
2.Placewholebeetrootinthemiddleofa
squareoftinfoilwithgarlicandhalfofthe
oliveoil.Bringedgesoftinfoiltogetherto
formaparcel.Placeinovenandbakefor
30-40minutesoruntilbeetrootaretender.
3.Oncebeetroothavecooled,rubtheskinoff
andcutinhalf.
4.Placeallingredientsintotheprocessing
bowlfittedwiththeuniversal‘s’blade.
Processuntilsmooth.Seasontotastewith
saltandpepper.
5.Storeinaclean,coveredcontainerinthe
refrigeratorforuptooneweek.
